How is Jesus` teaching like fresh wine requiring fresh wineskins?

The Son of God Coming to Reveal God's nature to mankind, was himself the incarnation- the God Himself. This was revolutionary and new. The Prophets and the Law were pointers to him, so they were in the old. The new testament required overhaul of the old perspectives, inorder to fit naturally.

Why did Jesus choose Matthew, a known taxgatherer and a despised man, to be His disciple?

To Jesus, all men had fallen short of God's Glory, that was why he gave assignment to those grumbling pharisees to understand His Ministry and Mission: He came to call sinners to repentance. Remember the verse: " There will be greater rejoicing in heaven over one sinner who repents, than the 99 who need no repentance". God is always LOVE.

Why did the people ask Jesus to leave, even after He delivered the two demon-possessed men?

Someone mightier than the two demoniacs was around. Secondly, There was the testimony of those who fed the pigs - testimony based on the conversation between the demons in the men, and Jesus, about the time of their torment. That powerful testimony sent shockwaves to the whole town. Thirdly, the delivered men were now sane. This sanity caused fear on their perpetrators. Lastly, their economic base was threatened. Imagine 200 swines all instantly perished in that lake?
