When asked about a religious practice (fasting), why does Jesus describe how old and new may not be compatible? Because of the amendment He has Come to Do. He is the new Covenant and the new can not be compared with the old. He came to AMEND the Old Laws not to Destroy it. So, when you have a new thing, or life, you Throw away the old, because the New has arrived.
