Why did Jesus tell the man to take up the mat and walk, even though Jesus knew this violated what the Jews permitted on the Sabbath?

Well, I think Jesus felt compassion for the man seeing that he has been by that pool for 38 years and not being able to reach that pool first to get a healing. Plus, it was a perfect time to show the Jews that a healing is not work but something good for another person.

Why do some people need signs and wonders to believe in Jesus, and others do not?

Some need signs because their faith is poor, others believe wholeheartedly because they have unwavering faith. What they learnt from childhood cannot be taken away from them. Others need those signs to keep their faith strong.

What is the harvest, who sows it and who reaps it?

The harvest is the repentance of everyone. I believe that those who preach the word of God sows it & those who reaps it are those who hear the word & keep it in their hearts & later tells about it. I think this is so.
