How can a person determine whether they are one of the sheep cared for by Jesus?

If you are a believer in God and His son Jesus Christ, you know right from wrong. You know what you are to do and the person you are meant to be and therefore you know you are one of God's sheep. You will follow Him because you know that you will be led to green pastures and live forever in His Kingdom.

Why did Jesus cause those who see to become blind?

If you had not seen nor heard the word of God you were blind to the fact that His son was Jesus, therefore you had not sinned. But after you witness Jesus and then not believe in Him, you are a sinner because your eyes have been opened to Him.

Why did Jesus insist on healing on the Sabbath when the Pharisees taught this was sin?

Because when you listen to and believe in God, He will hear your prayers. Jesus was answering the prayers of believers and to Him, every day was a day to answer those prayers of His followers.
