Why was it wrong for the servant to bury the talent?

This was because he had learned so much of Jesus Christ and His love for us, and instead of going and spread the good word, he choose to bury his good talent for 30 pieces of silver.

Since Jesus knew that He was to be crucified, why did He not just avoid trouble by leaving town?

Jesus divine faith in God the Father had surpassed His fear of death, He knew that He had a mission to fullfill, die for sins

How can one telll whether at the judgement he/she will be a sheep or a goat?

Very difficult to say for we are all imperfect human beings and our understandings and assumptions are not the same as the Divine power of Jesus, but we must continue to follow the path Jesus has laid out for us and leave judgement to the the Lord,(YOUR THOUGHTS ARE NOT MY THOUGHTS ) no one can tell.
