The miracle of multiplying bread and fish tell us that when everybody was worried about what the people will eat, Jesus was not worried because he knows that his Father in heaven can provide everything. Do you know that worrying is a sin to God since by worrying you are doubtful to his provision. So when you are worried pray all the worries to God and he will do the rest.

Why did Jesus tell the man to take up the mat and walk, even though Jesus knew this violated what the Jews permitted on the Sabbath?

Jesus did not violated anything as far as he is concern, if we christian reconized him as King then we know that he made the law and he can violate it because he is above the law.

Why do some people need signs and wonders to believe in Jesus, and others do not?

Some people are always doubtful about their prayers, if it really is true. Like me for instance I sometimes wait for signs if it is going to be done or not. Then if i am doubtful then I am not sure, if I am not sure then maybe I don't believe. But there are already miracles in my life that have happen, and by meditating that it will happen; it will really be done through our Lord Jesus.
