Jesus describe how old and new may not be compatible so to remind us that never will it be joined together , a new is for new and old is for old.

In Christianity, if you renew your spirit it becomes new and never be part of an old spirit.....

When asked about a religious practice (fasting), why does Jesus describe how old and new may not be compatible?

We need to rejuvenate our self by following and believing His words in able someday we can come to His kingdom and honor his greatness. That is why Jesus compare the old and new may not compatible as there are things that need thoroughly to follow to prevent tempatation and born ourself to a new one.

How did Jesus behave in sharp contrast to how religious leaders acted?

Jesus mingled with what they call the outcasts or "scum" of society - the sinners and the tax collectors who were much maligned by people. Jesus socialized with them as opposite to religious leaders who shunned and avoided these people like the plague.
