How can one find spiritual blessing by going through mourning, suffering, hunger or poverty?

İ think that when you go through these things you find out that the only person you have is God and that it makes you able to empathise with others in the same situation. İ think he may of ment it in another way as well through mourning of his death suffering for him hunger for God and poverty of not being near him and that peole who are fufilled on this earth have no need of him because they already have what they want but the ones who dont will be fufilled in heaven. But i might be wrong in that explanation.

Why were the religious leaders so upset that Jesus would heal on the Sabbath (religious day off)?

Because although they claimed to be men of God they were full of pomp and ceremony and they would rather let someone suffer than heal them which prove that they were following mans laws not Gods. They were angry because they were jealous of Jesus who went against what they said was the law and did good.
