What do you find astonishing about this centurion (leader of Roman soldiers)?

Humility. The elders of the Jews ask Jesus to help the servant so that the man who built the synagogue for them could be helped in his turn. He deserves cause he did us a favor. The centurion says simply that the servant needs healing and to please overlook his, the centurion, unworthiness. Why should Jesus help a pagan? he sends to plead him the devout elders of his community, who act but out of selfishness and not true love like Jesus did. He came for every single man - whatevr the country whatever the social class. The centurion acts out of pure love no self interest.

How does Jesus describe the person who calls him "Lord" but doesn`t do what he says?

Jesus does not threaten or condemn, but points at the objective visible lack of the foundations as a consequence of which, warning being thus given, the house will collapse. He was the son of a carpenter and knew how to build a solid house.
